Servings 8     




1 cup carrots
1/2 cup unsweetened shredded coconut
3/4 cup pitted dates
1/2 tsp. vanilla extract
1/2 cup walnuts
1/2 cup hemp hearts
1 tbsp cinnamon
1/4 tsp. nutmeg
1/4 tsp. ground ginger
2-4 drops stevia extract

    1. Peel and roughly chop carrots, then blend in a blender or food processor. 2. Then add rest of the ingredients except the coconut and blend until fully combined. 3. Always taste test, add more spices if you want. 4. Roll into 8 balls, or make smaller ones. Up to you. 5. Put coconut into a shallow bowl and cover the balls in the coconut. 6. Line a medium sized baking pan with partchment or tin foil and place balls on pan. 7. Put in fridge or straight into freezer.
